- Sautee chopped garlic, ginger lemon grass and a tablespoon of Thais red chile curry paste in canola oil for a min over medium heat
- add a heaping tablespoon of thai palm sugar or regular sugar
- Add a cup of chopped onion, cook till translucent
- Add chunks of chopped eggplant, red bell peppers
- Then finally add sliced fresh scallops, cook for less than a minute
- Serve over boiled soba noodles
- garnish with sliced green onions and fresh cilantro
