Back Home !!! Red Thai Scallop Curry over soba noodles

  • Sautee chopped garlic, ginger lemon grass and a tablespoon of Thais red chile curry paste in canola oil for a min over medium heat
  • add a heaping tablespoon of thai palm sugar or regular sugar
  • Add a cup of chopped onion, cook till translucent
  • Add chunks of chopped eggplant, red bell peppers
  • Then finally add sliced fresh scallops, cook for less than a minute
  • Serve over boiled soba noodles
  • garnish with sliced green onions and fresh cilantro
